Tuna with Miso Wasabi Mayonnaise

Ingredients: 5 servings

Fresh tuna, cut into 1/2" cubes1/2 lb / 250 g / 8.8 oz
Celery, strings removed,
cut into 1/2" cubes
1/4 cup / 75 g / 2.6 oz
Onion, thinly sliced1/2 cup / 100 g / 3.5 oz
Salt1 tsp
Sake (rice wine)1 tbsp

Miso mayonnaise

Miso2 tbsp / 30 g / 1.1 oz
Mayonnaise1 1/2 tbsp / 20 g / 0.7 oz
S&B Wasabi Powder1 tsp
Vinegar1 tsp / 5 g / 0.2 oz
Sugar1 tsp / 6 g / 0.2 oz
Chervil

Directions

  1. Bring water to boil, add salt and sake. Cook tuna for a few minutes. Chill tuna with cold water, then drain.
  2. Put the celery and onion into a large bowl and add salt. When ingredients are softened, drain well.
  3. Combine miso, mayonnaise, wasabi powder, vinegar and sugar in a bowl, then mix well.
  4. Mix 1) and 2) then add miso mayonnaise. Serve on a plate and garnish with chervil.
