Tender Chicken Breast Shabu-Shabu with Sesame Sauce

Ingredients: 4 servings

Tender chicken breast, thinly sliced1/2 lb

Salt1 tsp
Sake (rice wine)1 tbsp
Potato starch1 tbsp

Sauce

Roasted white sesame (cut sesame)2 tbsp
Vinegar2 1/2 tbsp
Sugar1 tsp
Soy sauce1 tbsp
SaltTo taste
S&B White PepperTo taste
S&B Japanese PepperTo taste
Sesame oil1 tsp

Garnish

Cucumber, shredded1/2 cup
Myoga ginger, shredded1 tbsp
Shiso (beefsteak plant)8 pcs
Crushed iceFor garnish

Directions

  1. Season chicken with salt and sake (rice wine) and dust with potato starch. Boil chicken quickly in boiling water. When they float to the surface, remove from the pot and chill chicken with cold water then drain.
  2. Combine sauce ingredients. Set aside.
  3. Mix cucumber and myoga ginger then place on a plate, put shiso and lay chicken over it. Place crushed ice around food.
  4. Serve with sauce.
