Japanese-style Meat Loaf

Ingredients: 4 servings

A

Ground pork10 oz / 300 g / 10.6 oz
Ground chicken breast7 oz / 200 g / 7.1 oz
Egg1

Sake (rice wine)1 tbsp

Light-colored soy sauce1 tsp

S&B Japanese Pepper1/2 tsp
Raisins1 oz / 30 g / 1.1 oz
Brandy1 tbsp
Walnut1 oz / 30 g / 1.1 oz
Onion, chopped1/2 cup / 70 g / 2.5 oz
Butter1 tsp
Dry bread crumbs3 tbsp
Milk2 tbsp

Pickled lotus root

Lotus root, sliced in 1/5" pieces
and cut into flower shapes
3 oz / 80 g / 2.8 oz

Directions

  1. Combine D ingredients. Set aside.
  2. Soak lotus root in vinegar water, boil quickly in boiling water then soak in D for over 30 minutes.
  3. Put chopped onion and butter in a microwaveable container then wrap and heat in the microwave for 2 minutes. Mix well and cool. Wash raisins quickly, chop and soak in brandy for 20 to 30 minutes. Soak dried bread crumbs in milk.
  4. Bake walnuts for 10 minutes in an oven at 150°C (300°F) and chop coarsely.
  5. Combine ingredients A in a bowl and mix in 3) and 4).
  6. Put B in a microwaveable container, heat in a microwave for 30 seconds, add C then heat for another 30 seconds.
  7. Line a loaf pan (18 x 8 x 6 cm) with parchment paper. Add 5), smooth the surface and bake in preheated oven for 35 minutes at 180°C (350°F).
  8. Brush on 6) and 7), sprinkle poppy seeds and bake for another 5 to 10 minutes.
  9. Remove from the loaf pan, cut into 1 cm (1/2") thick pieces and serve on a plate with fresh marsh and pickled lotus roots.
