Authentic Chinese Ma-bo Tofu

Ingredients: 2 servings

Tofu (firm), 1/2" cubes12 oz / 350 g / 12.3 oz
Ground pork3 oz / 100 g / 3.5 oz
Garlic, chopped1 tsp
Ginger, chopped1 tsp
Leek, finely chopped1/4 cup / 35 g / 1.2 oz
Salted black bean (douchi),
crushed by back of cutting knife
1 tbsp
Chinese chili bean sauce
(tobanjan)
1 tbsp
Chinese brown bean sauce (tenmienjan)1 tbsp
S&B La-Yu (chili oil)2 tsp
Cooking oil1 tbsp
Chicken stock powder1/2 tsp
Hot water4/5 cup / 200 ml / 7.1 oz
Japanese pepperPinch

Chinese rice wine1 tbsp
Soy sauce1 tbsp
SaltTo taste
Black pepperPinch
Potato starch, dissolved in water1/4 cup

Directions

  1. Cook tofu in boiling water then drain.
  2. Combine ingredients A. Set aside.
  3. Heat cooking oil in a frying pan and fry pork well. Add leek and black bean chili bean sauce, brown bean sauce and S&B La-Yu (chili oil) then stir fry.
  4. Dissolve chicken stock powder in hot water and add it to 3), season with A, add tofu and bring to simmer then thicken with potato starch.
  5. Serve on a plate and sprinkle on Japanese pepper.
