Curry Potage Soup

Ingredients: 5 servings

Meat (beef, pork or chicken of
your choice, 1" diced)
50 g / 1.8 oz
Onion, diced into 1" cubes30 g / 1.1 oz
Carrot, diced into 1" cubes20 g / 0.7 oz
Potato, diced into 1" cubes50 g / 1.8 oz
Cooking oil1 tsp
Water (or broth)250 cc
S&B Curry Sauce Mix40 g / 1.4 oz
Milk700 ml
Fresh cream (dairy or non-dairy )5 tbsp
Toasted bread, diced into 1" cubes1 cup

Directions

  1. Heat cooking oil in a pot and stir-fry meat and onions until brown.
  2. Add water and bring to boil. Cook for about 10 minutes with low heat until done.
  3. Turn off the heat, add curry sauce mix and melt it completely. Turn on the heat again and simmer until thickened (about 3 minutes).
  4. Add milk and cook on a low heat. (Add milk to taste.)
  5. When mixture is heated, add fresh cream to taste.
  6. Serve soup in a bowl and garnish with croutons.
